friday food post : cheddar biscuit barbecue



this is such a good and easy home cooked meal.  the ingredients are few, but the taste is many yums!  we've even had people over when serving this (last minute invitation) and it wasn't embarrassing!  it pleases man, woman, and child alike!!!
prep time approx 15-20 min.  (ready in 40-45 min)
ingredients:
1 lb. ground beef
1/2 c. chopped onion (1 med)
1 (16 oz.) can barbecue beans or pork and beans with molasses
1 (10 3/4 oz.) can condensed tomato soup
1 tsp. chili powder
1/4 tsp. garlic powder
1 (12 oz) can refregerated biscuits (or, see recipe below for the extra 5 min. of homemade)
1 c. shredded cheddar or american cheese

1.) heat oven to 375 degrees.  in large skillet, cook ground beef and onion over medium-high heat until beef is thoroughly cooked, stirring frequently.  drain.
i brown the onions first, because i always like to make sure they're cooked and not crunchy.  also, i added chopped garlic here instead of the powdered garlic later. 
2.)  stir in beans, soup, chili powder, and garlic powder; mix well.  bring to a boil.  reduce heat; simmer 5 minutes.

while this is getting hot and ready, i ask my cheese grater to start working:

and i start on my buscuits:
which are actually great-granny's buscuits.  they're awesome and full of fat.  if you want a similar recipe but changed a little for fat (shortening)'s sake, go HERE for a few substitutions. 
here's great-granny's recipe.  it's easy to cut in half (which we usually do).
2 1/2 c. flour
1 tsp baking powder (that i corrected because it's not enough to 1 Tbsp)
1 tsp soda
1 T sugar
1 tsp salt
sift together and then cut in 1/3 c shortening (Granny's tip:  if leaning any way, always go liberal with the shortening.  also, Crisco brand is the best (by far) shortening).
until it's crumbly like this:
and then pour in 1 c. buttermilk and stir from under...
...until moistened (like this):

at this point is when the recipe says to dump dough onto 1/2 cup of flour and knead until easy to spread without sticking.  melt some shortening into your baking pan (again go liberal for better biscuits).  cut out circle bisquits and dip in the shortening and then turn over to bake.  bake at 400 degrees for 17 minutes.
however, for this recipe, i just formed the biscuits flat in my hand and plopped them atop the mixture, here's my recipe's next step:
3.  separate dough into 10 biscuits.  spoon hot beef mixture into ungreased 8 inch square pan (or 2 qt. baking dish).  arrange biscuits over hot mixture.  sprinkle with cheese.


4.)  bake at 375 degrees for 20-25 minutes or until biscuits are golden brown and mixture is bubbly.


approx. 5 servings.   very easy to expand or decrease this recipe.  and also easy to variate it on if you like more biscuit/less meat, or vice verse. 
this is a 7 star meal at our house.  (7 stars from each member).

mmmm. i've been forgetting to ask you for this recipe for a long time! like, since we had it at your house, oh, ya know, forever ago. I brought home some leftover sloppy joe stuff from the lake and was going to use it up last night as the plain ol' sloppy joe. But, thanks to you, made this instead! although, looking through this again, i forgot the chili powder, but it was still yummy!
