this is a family favorite:
FLOATING TACOS from Liz Christensen (thanks liz!)
1 lb. hamburger
1 onion (chopped)
6 oz. tomato paste
8 oz. tomato sauce
24 oz. water
2 T. sugar
2 cloves garlic
1 tsp. each: accent, oregano, chili powder, cumin, and salt
1 c. cooked rice
brown hamburger and onion. drain. then add everything else except rice. simmer for 40 minutes and then add rice. while simmering, make sauce (below).
ranch sauce:
4 oz. cream cheese
1 c. buttermilk
1 c. mayo
1/2 tsp. each: salt, pepper, onion powder, and garlic powder
whip ingredients together and full speed and refrigerate for the remainder of the simmer time for the meat.
serve meat sauce over corn chips and topped with whatever taco toppings you desire (such as, but not limited to: lettuce, cheese, olives, and tomato) and then the ranch sauce.
